Austern munden nicht jedem – wer ihren Geschmack „verstanden“ hat liebt sie. Vieles passiert im Kopf und dann erst auf der Zunge, dabei gehört diese Delikatesse zu den Feinsten in ganz Europa. Im Mittelalter war die Auster in Küstenregionen ein billiges Nahrungsmittel für jedermann – vom Armeleuteessen kam sie auf den Teller  in aristokratischen Kreisen und galt als kostbare Delikatesse. Auch die Römer wussten die Auster zu schätzen: Julius Cäsar war ein grosser Fan und Kaiser Vitellus soll bei einem Festmahl sogar 1.000 Stück verschlungen haben. Die alten Griechen schrieben ihr aphrodisierende Wirkung zu. Der schlimme Finger Casanova empfahl sogar den Verzehr von 50 Stück am Tag, um die Manneskraft zu stärken. Frau Auster ist auch noch gesund: sie enthält zahlreiche Vitamine und Mineralstoffe, kaum Fett und Kohlenhydrate.

88 Prozent aller europäischen Austern kommen aus Frankreich. Aufgrund des sauberen Wassers an seinen Küsten ist Irland der zweitgrößte europäische Produzent, gefolgt von Grossbritannien. Im weltweiten Mengenmässig grosse Produzenten sind die USA und Kanada. Nummer 1 der jährlichen Austern produktion von rund vier Millionen Tonnen liefert China, mit einem Weltmarktanteil von über 80 Prozent.
