Das 2015 eröffnete SKYKITCHEN von Küchenchef Alexander Koppe, der sich noch im gleichen Jahr einen Stern erkocht hat, ist einer der neuen Hotspots am Gastro-Himmel über Berlin. Thront es doch in der 12. Etage des Designhotel andel’s by Vienna House in der Landsberger Allee 106.
Seit kurzem bittet nun auch Koppes Mutter Edeltraut immer Sonntags zu Mittagstisch – a real Berlin Lunch-Time. Das in dieser Form einmalige Konzept „Koppes Mutti macht Mittag“ verbindet typische Berliner Spezialitäten hausgemachter Art mit einem urban-stylischem Ambiente und einem wirklich sensationellen Panorama-Blick über Berlin – und dett Janze garniert mit ´ner dicken Portion Lebenserfahrung. Edeltraut Koppe hat zwei Profiköchinnen an ihrer Seite und macht den Löffelcheck.
Zu der üppigen Buffet-Auswahl aus besten, meist regionalen Zutaten gesellt sich Madame Koppes herzliche Art, die Gäste zu begrüßen und durch den sonntäglichen Tag zu begleiten. Eigentlich kommt die diplomierte Wirtschafterin aus einem ganz anderen Berufsfeld, und die Welt der gehobenen Gastronomie ist neu für sie. Umso authentischer versprüht sie eine natürliche Gastfreundschaft mit viel Empathie für die Nähe zum Gast. „Nicht jeder will hier betüttelt werden, sondern soll sich auf seine Art einfach nur wohl fühlen. Und jeder ist hier herzlich willkommen, denn wir sitzen zwar ganz oben, sind aber nicht abgehoben, sondern gemütlich und familiär“, so die Sternemutter.
Der Lunch-Sonntag ergänzt das Fine-Dining im SKYKITCHEN von Dienstag bis Samstag, wenn Alexander Koppe mit seinem unglaublichen Händchen für Geschmackssynergien, aber auch seinen raffinierten Interpretationen von Traditionsgerichten die Gäste verwöhnt. Trendige Foodisten, Kulinariker der City-West und internationales Publikum lassen sich hier ebenso den Gaumen kitzeln, wie die vielen Stammgäste aus der direkten Nachbarschaft am Stadtrand Ost. Koppe, selbst gebürtiger Ost-Berliner, schätzt es sehr, dass „auch mal jemand aus der Platte“ vorbeikommt. Die Tatsache, dass er trotz seines Erfolges unprätentiös und bodenständig ist und die Nähe zu seinen Gästen schätzt, erklärt sich, wenn man seine Mutter kennenlernt. Das Koch-Gen selbst hat Koppe zwar von der Uroma, die Köchin war, das Bodenständige aber von Edeltraut, die einfach gern und ganz normal kocht. „Jeder hatte doch ´ne ganz alltägliche Oma zu Hause, die noch Hausmannskost kochte. Bei uns können sich die Menschen an früher erinnern. Und wenn man das nicht kennt, lernt man es eben hier kennen“, so Alexander Koppe.
Der umtriebige Gourmetkoch hat jetzt zwar sonntags frei und kann sich seiner Familie und seinem Töchterchen widmen, aber er bringt für seine Gäste auch ein kleines Opfer. Denn er teilt mit ihnen nun sein ganz persönliches Futtern wie bei Muttern-Ritual als ein Gefühl von Geborgenheit, alten Werten und Kindheitsgeschmack, das er fast jeden Sonntag beim Besuch der Mutter selbst genossen hat. Denn die ist jetzt das neue Gesicht des SKYKITCHEN Sonntags-Lunch. Natürlich sprechen sich die beiden ab, klügeln die Sonntagskarte aus und besuchen ihre regionalen Zulieferer. Wie z.B. den Landhof Rahlf, der die feinen Wurstspezialitäten auf die Schlachtplatte zaubert. Der Fisch kommt aus Meck-Pomm und der Käse aus dem Allgäu. „Man muss ein gutes Gefühl haben, voll dahinter stehen und sich vertrauen“, da sind sich die beiden einig. Die Vor- und Nachspeisen (siehe Foto) sind vorerst ein festes Bouquet. Die 3 Hauptgänge à la carte werden saisonal angepasst. So gibt’s neben Königsberger Klopsen mit Beerenkapern und Rote Beete, Havelländer Spanferkelhaxe und Zander mit Schmorgurke im Sommer auch mal Spargel oder eine Eiskreation. Mit Graupen und Leipziger-Allerlei findet auch der vegetarische Gaumen seinen Genuss. „Wir wollen das Buffet auch nicht überladen. Lieber weniger, dafür mehr Qualität, denn für jeden muss etwas dabei sein. Und das Beste: Nachschlag gibt es bei mir so oft wie möglich“, zwinkert Edeltraut. Klassische Frühstückskost findet man auf der Karte kaum, aber dafür umso mehr Berliner Ur-Schmankerl, die erst im Mund und dann direkt im Herz landen.

Der Brunch findet jeden Sonntag, von 11.00 bis 15.00 Uhr statt. Im Preis von 39,- € p.P. sind der Begrüßungs-Prosecco, alle Heißgetränke sowie verschiedene Fassbrausen inklusive.
