Seit Jasmin Martin und David Johannes Suchy in der Torstrasse in Mitte Berlins erstes konsequent durchkonzipiertes, pflanzenbasiert veganes „Zero Waste Restaurant“ eröffnet haben, ist die Resonanz groß und die Food-Kanäle surren. Der Wunsch neue Wege zu beschreiten und Sinn- und Wertestiftend essen zu gehen ist omnipräsent. Das erst zu Beginn des Jahres eröffnete müllfreie Restaurant ist sogar schon für die Berliner Meisterköche 2019 nominiert. Das wird jeden Tag frisch und ohne industrielle Hefen gebacken: „So haben wir nicht nur 100% Geschmack, sondern sparen auch an Verpackungen und Transportwegen“, so die beiden radikal Müll frei und 360° – nachhaltig agierenden Gastronomie-Experten. Warum Frea? Das ist die nordische Göttin für Fruchtbarkeit, Ackerbaus und des Herdenfeuer. Mit ihrem Segen (Freya + Frigg =FREA) hat David das Konzept seines „Esszimmers für Seinesgleichen“ in die Wirklichkeit umgesetzt. Inspiration für das Restaurant hat er sich aber nicht in Skandinavien, sondern in England geholt. Dort war er im „Silo“ in Brighton – dem ersten Zero-Waste Restaurant Europas und hat dort den Pionier und Koch Halfdan Kluften gleich abgeworben. Mit seiner gleichgesinnten Freundin Jasmin Martin und einer internationalen Crew ist es ihm nun gelungen einen Ort zu erschaffen, der zielgerichtet „geschmackvolle“ Wahrhaftigkeit verströmt. „Everything starts with food“ steht für die innere Haltung des Wegbereiter-Paars: Denn jegliche Food-Reste enden in einer hauseigenen Kompostiermaschine im Gastraum.

Den darin innerhalb von 24-Stunden generierten „Waste-Dünger“ bekommen die Lieferanten und „füttern“ damit ihre Ackerböden. Dort wiederum wachsen die saisonalen Produkte zur erneuten Anlieferung – einen in sich besser geschlossenen Wertekreislauf kann es kaum geben. Beliefern darf das Frea allerdings nur, wer complettomente ohne Verpackung arbeitet. Frea bietet dabei die Option an auch ihre eigenen Warenkästen zu befüllen. „Es wird in der Zukunft sicher Menschen geben, die neue Material-Lösungen wie Bioplastik aus Maisstärke erfinden. Wir schaffen Anreize zum Nachdenken und versuchen durch größtmöglich angelegte Bestellungen und unbequemes Nachhaken auch großen Bioerzeugern und -Vertrieben Impulse zum Umdenken zu vermitteln“, so David Suchy, der neben dem Restaurant seit Jahren seine vegane Cateringfirma “Johnny and the Food“ leitet und durch seinen gleichnamigen Blog und Youtube-Kanal bereits bekannt ist. Fällt doch unliebsamer Müll an, wird die „böse“ Plaste gesammelt und von einem Künstlerprojekt zu Plastik-Art verarbeitet und transformiert. Ein solches Kunstwerk hängt bei Frea an der Wand, wie auch Lampen aus mit Sägespan gefütterten Myzel Pilzen. Von der Biowandfarbe, über bruchfeste Gläser bis zu Vintage Möbeln ist alles bis aufs kleinste Detail durchdacht und non-animalistisch. „Plastik ist ja eigentlich ein guter Rohstoff. Es wird nur nachlässig und Ressourcen verachtend im Übermaß genutzt.

Meine Oma hat Plastiktüten so lange benutzt, bis sie auseinanderfielen. Tupperware war von der Grundidee auch OK“, meint Ivonne Martin, die mittlerweile mit David so gut wie nicht mehr auswärts essen geht und glücklich ist, mit Frea ihren Good-Food-Ort mit zu-Hause-Gefühl eröffnet zu haben. Kein Wunder, denn bei Frea schmeckt´s: Die Küche ist für die Gäste offen einsehbar, dahinter wuseln die Köche mit Leidenschaft und bester Energie (die kommt gleich als Extraportion mit ins Essen). Von Brot über Schokolade, Nudeln oder Kombucha wird hier alles selbst gemacht. Mit je 3 saisonalen Vor-, Haupt und Nachspeisen ist die Karte übersichtlich, auch die Preise sind moderat. Die Lunchkarte wechselt wöchentlich – nur beste Zutaten kommen in die Schale. Köstlich die Tortelloni mit Kartoffel Pilz Füllung, fermentierter Weiße Bete und dem Klecks Bärlauch-Sauce. Das Topping, der Sauerteigcrumble, entstammt natürlich auch wieder einem Wertekreislauf (siehe oben😉…) und kein Krümel des guten Brots wandert in die Tonne. Auch mit in der Schale: ein Hauch von Asian, ein Hauch von Mittelmeer, ein Hauch von einfach nur Gemüse pur und eine Prise von Brighton´s Pioniergeist mitten in Berlin. Bei Frea ist alles ist gut gewürzt mit Qualität und Werten und köstlichen, puristisch angerichteter Schalen voller Denkanstößen – aber vor allem Zero schlechtem Gewissen.
