Stichwort: Rot-Weiss-Nikolaus….Wir wissen wo man sich für die gemütlichen Stunden zu Hause Schweizerisch wappnen kann. In der Holsteinischen Straße 19 in Wilmersdorf befindet sich eine Schweizer Enklave – das Chuchichäschtli.

Hier haben der Schweizer Chris Fankhauser (aus dem Solothurnischen) und sein Partner Matthias Kaiser (geboren an der Schweizer Grenze in Waldshut im Schwarzwald) vor über 7 Jahren ihren „kleinen Küchenschrank“ eröffnet. Klein aber randvoll ist diese mit Liebe geführte rot-weiß-bunt leuchtende kulinarische CH-Insel. Einmal eingetreten sollte man sich viel Zeit zum Stöbern mitnehmen.

Viele Kunden kommen mit gezielten Wünschen. Wie der Mann mit dem Gehstock und der Hornbrille, der gleichzeitig mit uns den Laden betritt und nach der Belper Knolle fragt. Eine echte Kennerfrage: worauf Matthias diesen „Schweizer Trüffel“ – eine in ein Tuchsäckchen gepackte Frischkäse-Kugel mit Knoblauch, Himalaya Salz und Pfefferhülle aus dem “Kaaschäschtli” zaubert. Eine Rarität – und für diese Woche der letzte. „Viele Kunden kommen, gerade um die Feiertage mit speziellen Wünschen und decken sich vorzugsweise mit einem oder mehreren unserer je 15 Sorten Fonduemischungen und Raclette-Käse-Sorten ein.

Die stammen ausnahmslos von Käsereien aus Familienbetrieben und sind, weil 6-18 Monate gereift laktosefrei“, und dazu liefert der Schwarzwälder gleich die einfache Rezeptur mit. In der Fertigfonduemischung, die es in vielen Varianten wie Safran, Prosecco oder Trüffel gebe, sei alles schon drin – auch der Wein und Schnaps. Man müsse einfach nur den Fonduetopf mit einer Knoblauchzehe ausreiben, den Beutel aufschneiden, die Masse in den Topf geben und bei mittlerer Hitze unter ständigem Rühren einer acht, erwärmen. Wer mehr Schnaps brauche, der tunke einfach sein Brot in ein extra Tröpfchen. Ein echter Aufwärmer.  “Ein Träumchen” sei es dann noch, den guten Valle Maggia Pfeffer vom Lago Maggiore darüber zu streuen.

Den guten weinseligen Tropfen dazu empfiehlt uns Chris. Das Regal mit an die 50 gute Tropfen – vorwiegend aus der Französischen Schweiz – kann sich schmecken lassen. Ein feiner Gamay, ein Dôle oder Fendant von den höchsten Rebbergen Europas oder ein schöner Compleo Cuvée Noire 2011 aus der Staatskellerei Zürich sind da schon eine passende liquide Festtagsbegleitung. Immer mal was anderes ausprobieren ist auch bei den Schweizer Aperitivos, Bränden und Likörchen die Devise. In der Schweiz möge ja auch nicht jeder die gleiche Heidi, flunkert Matthias. Der grüne Mount Rigi sei aufgegossen mit einem Prosecco wie ein Apero Spritz zu genießen, nur eben herb grün und mit Schweizer Alpen Aromen. Als Glühwein-Ersatz empfiehlt der Mann mit dem roten Schweiz-Shirt einen Appenzeller Glühmost – nicht zu verwechseln mit dem Käse! Das ist feinster Apfelsaft der Mosterei Möhl, die zwei Drittel ihres Mostobstes direkt von Landwirten aus der näheren Umgebung beziehe. Ein Drittel wird von Obsthändlern im Umkreis von 40 Kilometern mit Lastwagen herbeigeführt. Die berühmte Kräutermischung aus Appenzell mit 42 Kräutern verleihe diesem fruchtigen Wintergetränk seinen unverwechselbaren Charakter. Süße Zimt- und Zitrusnoten passen bestens zum Weihnachtsgebäck oder als “Gallenspülung” für danach.

Matthias absoluter Favorit ist der Röteli der Destillerie Kindschi (seit 1860) aus sonnengetrockneten Kirschen, Bergquellwasser, Kräutern und Gewürzen aus den Bündner Alpen. Gekühlt als Shot, auf Vanilleeis, Süßmost-Creme, zum Apfeldesserts oder mit einem Stück Schoki in die Bratensauce gerührt, ist er ein echter Geheimtipp und die geschmeidige Überleitung zu den eigentlichen Schweizer Leckerlis: Das süße Schoki-und Gebäck-Spektrum der Schweiz kann sich  wie Jedermann und Jederfrau bekannt – sehen (und wegschlotzen) lassen. Matthias verrät wie man eine Schweizerpraline von einer aus dem grossen Kanton (Schweizer Ausdruck für Deutschland) unterscheidet: die CH-Schoki sei immer gefüllt, die deutsche sei hohl. Schweizer mögen ja manchmal ein verschrobenes Völkchen sein, aber mit Schokofülle geizen sie scheinbar nicht. Ein Beispiel dafür sind die Pralinen von Chocolats Favarger aus Genf aus Zartbitter Schokolade, Mandeln und konfierten Orangen. Zum Schenken bereits in goldenem Knisterpapier verpackt, warten die letzten handgefertigten Schokoküsse der Schweiz von Dubler am Tresen auf ihre Liebhaber, die dafür extra nach Wilmersdorf pilgern.

In der Schweiz ganzjährig, woanders nur zu Weihnachten kennt man die Basler Läckerli. Bereits im Mittelalter wurden in Basel Lebkuchen gebacken. Daraus hat sich nach und nach das Basler Läckerli entwickelt. Für die – nach einem streng geheimen Rezept hergestellten – Original Basler Läckerli werden nur beste Zutaten verwendet: Bienenhonig, Mandeln und Haselnüsse, Orangeat und Zitronat, sowie edelste Gewürze und Baselbieter Kirsch. Seit über 100 Jahren ist das Basler Läckerli, nur Original und schön verpackt vom Läckerli Huus, eine süsse Erfolgsgeschichte. Und Chris empfiehlt, dass man sie am besten im Mund leicht anschmelzen lässt, damit sich Honig und Gewürze voll entfalten. Das wohl beliebteste Schweizer Weihnachtsgebäck sind für Kenner aber auch das Basler Brunsli, das ohne Mehl mit Haselnüssen, Schokolade, Eier und Zucker gebacken wird sowie auch die Bündner Nusstorte – ein intensives Honig-Walnuss-Genusserlebnis. Schön rot-weiss und dekorativ kommt ein echter Kult-Keks-Klassiker aus den 60er Jahren daher – die Kägi Fret Schokoladewaffel darf auf dem Nikolausteller auf keinen Fall fehlen.

Dass beide eigentlich aus dem Film- und Musikgeschäft kommen ist in ihrer Schweizer Herzblut-Enklave deutlich zu spüren. Man fühlt sich hier wie der Besucher einer rot-weissen, prall gefüllten Musical-Bühne. Nebst Feinkost findet man hier natürlich auch die berühmten Schweizer Messer, andere Küchenhelfer sowie viele Berghüttenzauber verströmende Geschenk- und Deko-Ideen.
