Thomas Vetter – der Mann mit der Schiebermütze ist ein Gastgeber mit einer besonderen Spezialisierung. In Berlin Schöneberg betreibt er Deutschlands erste Sardinenbar, die gerade ihr zweijähriges Bestehen feiert. Der ehemalige Koch und Küchenmeister hat im Geschichtsunterricht gut aufgepasst: und weiß, dass schon die alten Römer einen kleinen, wendigen Fisch namens „Sardina pilchardus“ sehr zu schätzen wussten und ihn in gesalzener, marinierter oder geräucherter Form vernaschten. Noch heute werden Sardinen im mediterranen Raum wie gut gereifter Wein gehandelt und verkostet. In den Hafenstädten der Bretagne, aber auch in Portugal und Spanien sind sie echte Stars – ja Delikatessen. Inspiration für sein Feinkostbistro für Fischkonserven fand er in den verwinkelten Gassen Lissabons und hat sich in die kunterbunten Blechschmuckdosen mit delikatem Inhalt verliebt. Ein bisschen Mut gehörte schon zu seiner Idee, den hierzulande eher verpönte Dosenfisch in die Berliner Foodlandschaft zu bringen. Der Berliner Gastronom hat alles, was konservenkompatibel ist à la carte parat.
